Braised Salmon with Pineapple (Cá hồi kho thơm) Recipe

 


Ingredients
Marinate Salmon
1.5 lb. Salmon
1 tsp. chopped Shallot
1 tsp. minced Garlic
1 tsp. Sugar
1/2 tsp. Salt
1 Tbsp. Olive Oil
1/2 tsp. Chili Powder
Ground Black Pepper

Braising
1 Pineapple
Green Onions
2 Tbsp. Olive Oil
1 Tbsp. minced Garlic
1 Tbsp. chopped Shallot
2 Tbsp. Sugar
3 Tbsp. Water
1 tsp. Fish Sauce
1/2 tsp. Chili Powder
Ground Black Pepper


Cut 1 Pineapple into bite size pieces. Cut and rinse 1.5 lb. Salmon. Cut some Green Onions. 

Marinate the Salmon.  Place in a bowl and add in 1 tsp. chopped Shallot. Add 1 tsp. minced Garlic, 1 tsp. Sugar, 1/2 tsp. Salt, 1 Tbsp. Olive Oil, 1/2 tsp. Chili Powder and some Ground Black Pepper. Mix well and set aside for 30 minutes. After 30 minutes, air fry the Salmon for 15 minutes.  Set aside. 

Add 2 Tbsp. Olive Oil into a pan.  Add 1 Tbsp. minced Garlic and 1 Tbsp. chopped Shallot.  Cook on medium high heat.  Add in the Pineapple and 2 Tbsp. Sugar.  Add 3 Tbsp. Water, continue to simmer on high heat.  Add 1 tsp. Fish Sauce. Add 1/2 tsp. Chili Powder. Add in the Salmon. Continue to let it simmer.  Add in some Green Onions and Ground Black Pepper.  Enjoy with meal!
