Luffa with Eggs (Mướp với trứng) Recipe

 


Ingredients
1 Egg White + 3 Egg Yolk 
4 luffas
1/2 tsp. Kosher Salt
1 tsp. Sugar
1 tsp. Mushroom Seasoning
1/2 tsp. Ground Black Pepper
1 tsp. Fish Sauce
Olive Oil
minced Garlic
Green Onions
Chives
2 Tbsp. Water

Mix 1 Egg White with 3 Egg Yolk. Add 1 Tbsp. Olive Oil and 1 Tbsp. minced Garlic into a pan.  Saute for a few seconds and add in the egg mixture.  Cook and then cut into pieces. Set aside. 

Rinse, peel and cut 4 Luffas. Add 1 Tbsp. Olive Oil and 1 Tbsp. minced Garlic for a few seconds. Add in the Luffas. Add in 2 Tbsp. Water. Cook on medium high heat for a few minutes.  Add in some Green Onions. Add 1/2 tsp. Kosher Salt, 1 tsp. Sugar, 1 tsp. Mushroom Seasoning and 1/2 tsp. Ground Black Pepper.  Add in some Chives. Continue to let it simmer.  Add in 1 tsp. Fish Sauce. Add in the cooked Eggs.  Remove from heat and enjoy with meal.
