Stir-fry Patty Pan Squash with Eggs Recipe

 


Ingredients
1 1/2 lb. 
2 Eggs
1 tsp. Fish Sauce
2 Tbsp. Olive Oil
1 Tbsp. minced Garlic
1 tsp. Salt + extra Salt
1 tsp. Mushroom Seasoning
1 1/2 tsp. Sugar
chopped Green Onions
Ground Black Pepper

Rinse and wash 1 1/2 lb. Patty Pan Squash.  Cut into slices and place in water with salt. Then rinse again and drain out all the water.

Crack 2 Eggs in a bowl and add in 1 tsp. Fish Sauce.  Mix and  set aside. 

In a pan add in 2 Tbsp. Olive Oil. Add in 1 Tbsp. minced Garlic.  Saute on medium high heat and add in the squash. Mix and cook for a few minutes.  Add in 1 tsp. Salt, 1 tsp. Mushroom Seasoning, 1 1/2 tsp. Sugar and mix.  Add in some Green Onions and Ground Black Pepper. Stir up the squash and then pour in the egg mixture.  Continue to let it cook on high heat.  Wait for the egg to be semi cooked add in some more chopped Green Onions.  When the eggs are fully cooked, remove from heat and enjoy with meal.
