How to Dry and Fry Smelt Headless Fish Recipe

 


Ingredients
3 lb. Smelt Headless Fish
2 Tbsp. Kosher Salt
3 Chili Pepper
2 Whole Garlic
1 tsp. Mushroom Seasoning
Frying Oil

Peel 2 whole Garlic and place in a processor.  Add in 3 Chili Pepper. When it’s finely chopped.  Place into a bowl and add in 2 Tbsp. Kosher Salt. Add in 1 tsp. Mushroom Seasoning.  Mix well.  

Rinse 3 lb. Smelt Headless Fish. Place in a bowl and marinate with the Garlic mixture.  Set aside for 3 hours. After 3 hours, place it in a colander to dry in 90 degrees F heat or place in dehydrator.  After the fish becomes dried, pour some frying oil into a pan.  Fry until golden and enjoy with rice or congee.
