Pickled Ginger Recipe

 


Ingredients

12 oz. Ginger
3/4 cup Vinegar
3/4 cup Sugar
1 tsp. Kosher Salt
1 cup Water

Peel 12 oz. Ginger.  Fill a bowl with Water and add in some Salt. Soak the peeled Ginger in the salt water. While you let it soak in the water, take each ginger out and cut into slices.  Put it back in the water, continue to let it soak in the water for 1 hour.  

After 1 hour, drain out the water and rinse.  Boil some water add in the Ginger.  Boil the Ginger for a few minutes. Drain out the hot water, put the Ginger in ice cold water  .  Then drain out the cold water.  Squeeze out the water and set the Ginger aside. 

In a small sauce pan, add in 3/4 cup Vinegar.  Add 1 cup Water.  Add 3/4 cup Sugar and 1 tsp. Kosher Salt.  Bring to a boil and remove from heat.  Let it cool. 

Have a clean glass jar.  Add in the Ginger and then pour in the vinegar mixture.  Close the lid, wait for 4 days before using.  Enjoy.
