Stir-fry Bok Choy with Chicken and Rice Stick Noodles Recipe

 Noodles
14 oz Rice Stick Noodles
1 Tbsp. Olive Oil

Boil 14oz Rice Stick Noodles.  It takes about 7-10 minutes.  Make sure to stir or else the noodles will stick to the bottom of the pan.  Once it’s done, strain out the water and rinse with cold water.  Add in 1 Tbsp. Olive Oil and mix it in with the noodle so it won’t stick together. 

Chicken
1 Chicken Breast (cut into slices)
1 tsp. chopped Shallots/minced Garlic
1 tsp. Oyster Sauce
Pinch of Chicken Seasoning 
Ground Black Pepper

Marinate the chicken breast.  In a bowl, add in 1 Chicken Breast cut into slices. Add in 1 tsp. chopped Shallots and minced Garlic. Add 1 tsp. Oyster Sauce. Add pinch of Chicken Seasoning and some Ground Black Pepper.  Mix well, let it marinate for 1 hour. 

Bok Choy with Chicken
Marinated Chicken
Bok Choy (about a handful)
2 Tbsp. Olive Oil
1 Tbsp. Onions
Bottom half of some Green Onions
1 tsp. minced Garlic
1 tsp. chopped Shallots
1 tsp. Sugar
1/2 tsp. Chicken Seasoning
1/4 tsp. Dark Soy Sauce

In a pan, add in 2 Tbsp. Olive Oil. Add 1 Tbsp. Onions, 1 tsp. chopped Shallots, 1 tsp. minced Garlic and bottom half of Green Onions.  Saute for a few seconds and add in the marinated Chicken. Using medium-high heat, cook the chicken and then add in the Bok Choy.  Add 1 tsp. Sugar, 1/2 tsp. Chicken Seasoning and 1/4 tsp. Dark Soy Sauce.  Mix well and remove from heat. 

Bok Choy with Chicken and Rice Noodles
cooked Rice Noodles
1 tsp. minced Garlic
1 tsp. chopped Shallots
1/2 cup Onions
Green Onions
2 Tbsp. Olive Oil
1/2 tsp. Sugar
1/2 tsp. Dark Soy Sauce
Pinch of Chicken Seasoning
mixed Bok Choy and Chicken
Ground Black Pepper

In a pan, using medium-high heat add 2 Tbsp. Olive Oil.  Add 1/2 cup Onions, 1 tsp. chopped Shallots and 1 tsp. minced Garlic. Saute for a few seconds.  Add in the Rice Stick Noodles. Add 1/2 tsp. Sugar. Add 1/2 tsp. Dark Soy Sauce. Add a pinch of Chicken Seasoning and mix. Add in the mixed Bok Choy and Chicken. Add in the Green Onions and some Ground Black Pepper.  Mix well and serve.
