Bitter Melon with Salmon Soup (Canh khổ qua nhồi cá hồi) Recipe



Salmon
1 lb. Salmon
1 1/2 Tbsp. minced Garlic
2 Tbsp. chopped Shallots
2 Tbsp. Tapioca Flour
1 tsp. Kosher Salt
1 tsp. Ground Black Pepper
1 1/2 tsp. Sugar

Soup
1 tsp. Kosher Salt
1 1/2 tsp. Sugar
1 tsp. Fish Sauce
4 Large Bitter Melon
Ground Black Pepper
chopped Green Onions

Cut 1 lb. Salmon into small pieces.  Using a food processor, add in the Salmon, 1 1/2 Tbsp. minced Garlic, 2 Tbsp. chopped Shallots, 2 Tbsp. Tapioca Flour, 1 tsp. Kosher Salt, 1 tsp. Ground Black Pepper and 1 1/2 tsp. Sugar.  Once it’s done, remove from food processor.  

Cut 4 Large Bitter Melon and remove the center.  Stuff the Salmon inside the Bitter Melon.  

Fill a pot with about 5 cups water, add in the stuffed bitter melons.  Bring to a medium boil.  Let it cook until the melon are slightly soften. Add in 1 tsp. Kosher Salt, 1 1/2 tsp. Sugar and 1 tsp. Fish Sauce.  Continue to let it simmer until the melon are cooked.  Add in chopped Green Onions and some Ground Black Pepper and serve with rice.
