Ca Ri De (Curry Goat) Recipe

Ingredients

Prepare Goat Meat
1 lb. Goat Meat
1 tsp. Salt
Ginger slices
1 Tbsp. White Chinese Cooking Wine
1 Tbsp. Vinegar

Marinate
1/2 tsp. Salt
1 tsp. Sugar
2 tsp. minced Garlic
2 tsp. Chopped Shallots
2 tsp. minced Lemongrass
Ginger slices
2 Tbsp. Curry Paste
2-4 Lemongrass sticks
5 dried Chili Pepper
1 tsp. Annatto Oil
Prepared Goat Meat  1 lb.

Cooking Curry Goat
6 cups Water
Marinated Goat Meat
1 Tbsp. Oil
Ginger slices
1 Tbsp. minced Garlic
1 Tbsp. chopped Shallots
1 Tbsp. minced Lemongrass
1 Tbsp. Curry Paste
2 Potatoes (small chucks)
2 tsp. Sugar
3/4 cup Coconut Milk



First, fill a pot with water.  Add 1 tsp. Salt and a few slices of Ginger.  Add 1 Tbsp. White Chinese Cooking Wine and 1 Tbsp. Vinegar.
Add in 1 lb. Goat Meat, remember to cut into small chucks.  Bring to a boil, once the meat is semi-cooked.  Drain out the water, remove the ginger slices.
Let it air dry for a few minutes.

Now to marinate the goat meat, put it into a large bowl. Add 1/2 tsp. Salt, 1 tsp. Sugar, 2 tsp. minced Garlic, 2 tsp. chopped Shallots
2 tsp. minced Lemongrass, a few slices of Ginger and 2 Tbsp. Curry Paste.

Smash about 2-4 sticks of Lemongrass.  Cut it about 2 inches long and add into bowl. Chop about 5 dried Chili Pepper add into bowl.
Add 1 tsp. Annatto Oil mix well and cover with plastic wrap.
Let it marinate for at least 2 hours.

After 2 hours, in a pan add in 1 Tbsp. Oil. Add a few slices of Ginger, 1 Tbsp. minced Garlic, 1 Tbsp. chopped Shallots and 1 Tbsp. minced Lemongrass.
Saute for a few seconds.Add in the marinated Goat Meat.  Semi-cooked the meat, remember don't cook it all the way.  Add in 1 Tbsp. of Curry Paste.
Once it looks semi-cooked, remove from heat.  Fill a pot with 6 cups water. Add in the Goat Meat, bring it to a simmer.
Let it cook for about 30 minutes or until the meat is tender. Peel and cut 2 Potatoes into chucks. Add it into the pot. Then pour in 3/4 cup Coconut Milk.
Add 2 tsp. Sugar. Let it simmer for a few minutes.  Then remove from heat and serve hot with bread.
