Bi Chay (Vietnamese Vegetarian Shredded Pork with Tofu) Vermicelli Noodles Baguette Spring Rolls Recipe


Bi Chay (Vietnamese Vegetarian Shredded Pork with Tofu) Vermicelli Noodles Baguette Spring Rolls

Ingredients
1 Fresh Tofu Block
1/2 Jicama
1 small White Potato
1 medium Carrot
2 Sweeten Radish
Frying Oil
bottom half of 1 Leek
1/8 tsp. Mushroom Seasoning
1/8 tsp. Kosher Salt
1 tsp. Sugar
3-4 Tbsp. Roasted Rice Powder

Vegetarian Sour Soy Sauce
3 Tbsp. Soy Sauce or to taste
1 Lime
1 tsp. Chili Sauce
2 Tbsp. Sugar
2 Tbsp. Water

Other
Vermicelli Noodles
Bean Sprouts
Fresh Herbs
Pickled Daikon and Carrots
crush Roasted Peanuts
Baguette
Rice Paper

Cut 1 Fresh Tofu Block about a quarter thick.  Have your frying oil ready, fry each piece until golden brown. Place on paper towel and set aside.
Peel and cut about 1/2 of a Jicama into slices, 1 small White Potato and 1 medium Carrot. Fry until slightly brown and remove from oil.
Chop bottom half of 1 Leek, in a pan add in 2 Tbsp. Oil.  Add in the chopped Leek and saute until slightly brown.  Remove from heat and set aside.
Cut 2 Sweeten Radish into strips, rinse with water a few times.  Drain out the water.  In a pan add in the sauteed Leek and the Sweeten Radish.
Add 1/8 tsp. Mushroom Seasoning and Kosher Salt.  Add 1 tsp. Sugar. Mix well, let it cook for about 3 minutes and remove from heat.
In a pan add in about 3-4 Tbsp. of Roasted Rice Powder.  Toast it for a about a minute and remove from heat.
Cut the Tofu, Potato, Carrot and Jicama into strips and put into a large bowl. Add in the cooked Sweetened Radish and then add in the Roasted Rice Powder.
Mix well. It's ready to be serve.  Three different ways to enjoy this dish is by eating it with Vermicelli Noodles, Baguette or make it into spring rolls.

Making the Vegetarian Sour Soy Sauce.  In a bowl squeeze 1 Lime. Add 1 tsp. Chili Sauce.  Add 2 Tbsp. Sugar and Water. Add 3 Tbsp. Soy Sauce or to taste.
Mix well and set aside.

To make the Vermicelli Noodles, boil some Noodles for about 7-8 minutes.  Drain out the water and rinse with cold water. Shuffle the noodles.
Assemble the bowl, add in the Vermicelli Noodles, Fresh Herbs and Bean Sprouts.  Add in Bi Chay, Pickled Daikon and Carrots and crushed Roasted Peanuts.
Drizzle some of the vegetarian sauce and serve.

Have a baguette, cut add in the Bi Chay and drizzle some Vegetarian Sauce.

To make the spring rolls, wet the rice paper.  Add in the Fresh Herbs and Bean Sprouts.  Then the Bi Chay and roll. Enjoy with Vegetarian Sauce.
