Baby Jackfruit Paste (Trai Gac)
Ingredients
1 Baby Jackfruit
2 Tbsp. Canola Oil
2 Tbsp. Sugar
1/2 tsp. Kosher Salt
Canola Oil
Cut 1 Baby Jackfruit in half. Remove the meat and place in a bowl. Scrape it from the Baby Jackfruit.
Put into a food processor, process until it's finely grind into a paste. In a sauce pan add in 2 Tbsp. Canola Oil. Using medium heat, add in the Baby Jackfruit and mix.
Add in 2 Tbsp. Sugar and 1/2 tsp. Kosher Salt. Mix well, once the sugar had dissolved remove from heat.
Let it cool completely. In a clean glass jar, scoop in the Baby Jackfruit paste. Put a layer of Canola Oil on top. Place a plastic wrap on top and seal up with lid.
Keep in the fridge to use when making Xoi Gac (Baby Jackfruit Sticky Rice).
