Bo Kho (Vietnamese Beef Stew) Hu Tieu Bo Kho/Bo Kho Banh Mi Recipe




Bo Kho (Vietnamese Beef Stew) Hu Tieu Bo Kho/Bo Kho Banh Mi


Ingredients
2 lbs. Beef Shank
3 Tbsps. Bo Kho Seasoning
1 1/2 tsp. Salt
3 tsp. Sugar
1 Tbsp. chopped Shallots
1 Tbsp. minced Garlic
1 Tbsp. minced Lemongrass
5 Bay Leaves
1 Tbsp. Oil
1 Tbsp. minced Garlic
1 1/2 Tbsp. chopped Shallots
1 Tbsp. Annatto Seed Oil
2 Tbsps. Ketchup
1/2 tsp. Paprika
2 Tbsps. Fish Sauce
1 Tbsp. Bo Kho Seasoning
1 Daikon
15 cups Water
Salt (to taste)
4 Lemongrass
5 Carrots
1 package Rice Stick Noodles
Bread
Tapioca Starch
Sliced Onions
Basil Leaves
Culantro
Bean Sprouts
Chili Pepper


Cut 2 lbs. Beef Shank.  Cut it into large chucks and put into a bowl to marinate. Add 3 Tbsps. Bo Kho Seasoning.
Add 1 1/2 tsp. Salt. Add 3 tsp. Sugar. Add 1 Tbsp. Add 1 Tbsp. chopped Shallots. Add 1 Tbsp. minced Garlic.  Add 1 Tbsp. minced Lemongrass.
Add 5 Bay Leaves.  Mix well.
Let it marinate for about 2 hours.
In a pan add 1 Tbsp. Oil.  Add 1 Tbsp. minced Garlic. Add 1 1/2 Tbsp. chopped Shallots. Sauté for a few seconds.
Add 1 Tbsp. Annatto Seed Oil. Continue to sauté. Add 2 Tbsps. Ketchup. Add 1/2 tsp. Paprika. Mix well.
Add in the Beef. Mix.  Add 2 Tbsps. Fish Sauce.  Stir well and let it cook until it's semi cooked.
Add 1 Tbsp. Bo Kho Seasoning. Once it's semi cooked, remove from heat and set aside.
Peel and rinse 1 medium size Daikon.  Cut into chucks, have a large pot ready and fill about 15 cups of Water.
Bring to a simmer and put in the Daikon. Add in the semi-cooked Beef, scrub all the extra sauce and pour it in as well.

You need 4 Lemongrass, using a pestle smash each Lemongrass. Add into the soup.  Let it simmer for 2 hours.
After 2 hours, you need to remove some of the Daikon from the soup. peel and rinse  5 Carrots.  Cut it about 1 1/2 inches long.  Before adding in the carrots
Then add the carrots into the soup and continue to let it simmer for another hour.
After 1 hour, remove the Lemongrass from the stew.  Season with salt to your taste.  Continue to let it simmer on low heat until you are ready to serve.
To make the Noodles, you'll need 1 package of Rice Stick Noodles.  Boil some water, add in the noodles.  Let it cook for about 5-7 minutes or until soften.
Drain out the noodles and rinse with cold water. Put it in a bowl, pour in the stew.  Garnish with some sliced Onions, Bean Sprouts, Chili Pepper
and herbs such as Basil Leaves and Culantro.
Squeeze some lime juice into your bowl and enjoy.
If you want to have the stew with bread.  You will need to mix some Tapioca Starch in a small bowl with water. 
Add it into the stew and let it simmer for a little bit until it kind of thickens.  Pour it into a bowl, garnish with some sliced Onions and Culantro (Ngo Gai). If you like it spicy add some pepper.
Dip the bread into the stew and enjoy Bo Kho Banh Mi.
