Banh Duc Tom Chay (Steamed Rice Coconut Cake with Dried Shrimp)
Banh Duc Tom Chay (Steamed Rice Coconut Cake with Dried Shrimp)
Ingredients:
Rice Coconut Cake
2 cup Rice Flour
1 cup Tapioca Starch
3 1/2 cup Water
1 cup Coconut Milk
3/4 tsp. Salt
2 tsp. Sugar
Scallion Oil
3 Tbsp. Oil
1 cup chopped Green Onion
Dried Shrimp Topping
1 cup Dried Shrimp
1 Tbsp. Oil
1 Tbsp. Annatto Seed Oil
2 Tbsp. minced Garlic
In a large bowl add 2 cups Rice Flour. Add 1 cup Tapioca Starch. Add 3/4 tsp. Salt. Add 2 tsp. Sugar. Mix well.
Add 1 cup Coconut Milk. Add 3 1/2 cups Water. Mix well. Cover with plastic wrap and let it sit for 30 minutes.
After 30 minutes. Using medium low heat, pour the batter into a large pot. Mix until it thickens and no longer sticks to the pot.
Spread some oil into 2 baking pans. Now put the dough into the two pans. Spread it evenly and try to flatten it. Cover with plastic wrap. Steam each cake for 15 minutes.
After steaming for 15 minutes, remove from steamer and let cool completely.
To make Scallion Oil, you'll need 3 Tbsp. Oil and 1 cup chopped Green Onion. In a pan add 3 Tbsp. Oil. Heat up the Oil, once it hot turn off heat and add in 1 cup chopped Green Onion.
Mix and set aside.
For the toppings you will need 1 cup Dried Shrimp, 1 Tbsp. Oil, 1 Tbsp. Annatto Seed Oil, and 2 Tbsp. minced Garlic. Soak 1 cup Dried Shrimp in warm water for at least 4 hours.
Drain out the water and finely chop. Then put into a bowl. Using medium heat, add 1 Tbsp. Oil and 1 Tbsp. Annatto Seed Oil.
The Annatto Seed Oil will make the Dried Shrimp have a more orangey color.
If you prefer not to use Annatto Seed Oil, you can use regular oil instead. Add 2 Tbsp. minced Garlic. Sauté for a few seconds. Add in the finely chopped Dried Shrimp.
Stir until the shrimp becomes dry and remove from heat.
When the Rice Coconut Cake has cool completely. Spread some Scallion Oil on top. Sprinkle the Dried Shrimp. You can use a wavy knife or a regular knife, cut the cake into smaller pieces.
Have Dipping Fish Sauce and Pickled Daikon and Carrot ready.
To serve, place some Pickled Daikon and Carrot on top. Pour some Dipping Fish Sauce and enjoy.
