Xoi Dau Den (Sticky Rice Black Bean and Coconut)

Xoi Dau Den (Sticky Rice Black Bean and Coconut)

2 cups Sweet Rice
1 cup Black Bean
1/2 tsp. Salt
1/2 tsp. Salt
2 Large Banana Leaves
1 Brown Coconut
1/2 cup Sesame Seed
1 cup Peanuts
1 Tbsp. Salt
3 Tbsp. Sugar
White Waffles (Optional)

Soak 2 cups Sweet Rice and 1 cup Black Bean in water overnight. Next day, rinse the Sweet Rice for about 2 times.  Set aside and let it air dry.  Then rinse the Black Bean about 3 times.
Using a large sauce pan, cook the Black Bean in water for about 1 hour or until soften.  Add enough water that it covers the Black Bean. 
Cook using medium heat, add 1/2 tsp. Salt. When the Black Bean soften, remove from heat.  Drain some of the water out. You want some of the Black Bean water to remain in the bowl.
In a bowl, mix the Sweet Rice and Black Bean with some of the Black Bean water together. Add 1/2 tsp. Salt. Mix well.  You want the Sweet Rice to have a light brown color.
Layout 2 layers of Banana Leaves in your steamer. Pour in the Sticky Rice mixture on top of the banana leaves. Spread it out evenly. While you let it steam, crack the Brown Coconut.
Scrape the coconut meat into a bowl and set aside. In a pan, roast 1/2 cup Sesame Seed.  Using medium heat, roast until it has a golden brown color.  Put in a bowl and set aside.
Roast 1 cup Peanuts, until golden brown. Remove the outter layer of the peanuts, put in a bowl and set aside. Using a mortar, crush the Peanuts.  Put in a bowl and set aside.  Use the mortar and pound the Sesame Seed, put in a bowl and set aside.
In a bowl, add in the crushed Peanuts. Add the roasted Sesame Seed. Add 1 Tbsp. Salt.  Add 3 Tbsp. Sugar. Mix and set aside.
After steaming for about 15 minutes, sprinkle some water over the Sticky Rice.  Stir it and continue to let it steam for about another 15 minutes.
To serve, scoop some of the Sticky Rice on a plate.  Sprinkle the Peanut and Sesame Seed mixture on top.  Put some Shredded Coconut and enjoy. 
Another way to eat the Stick Rice is by taking a Banh Phong.  Place some Sticky Rice on top, sprinkle the Peanut and Sesame Seed Mixture.  Then the Shredded Coconuts and fold.
