Stir-fry Pickled Mustard Green with Eggs (Dua Cai Chua Xao Trung)




Stir-fry Pickled Mustard Green with Eggs (Dua Cai Chua Xao Trung)
Ingredients
2 cup chopped Pickled Mustard Greens
2 Eggs
1 chopped Green Onion
2 tsp. minced Garlic
2 tsp. Oil
1 Tbsp. Soy Sauce
1/8 tsp. Mushroom Seasoning
1/2 tsp. Sugar
some Black Pepper
1 tsp. Sugar

Rinse about 2 cups Pickled Mustard Greens. Squeeze out the water.  Chop, put in a bowl, and set aside.
In a small bowl crack 2 Eggs. Add 1 Tbsp. Soy Sauce.  Add 1/8 tsp. Mushroom Seasoning. Add 1/2 tsp. Sugar.
Add in some Black Pepper. Add in some chopped Green Onion and mix. Then set aside.
In a pan add in 2 tsp. Oil. Add 2 tsp. minced Garlic. Sauté for a few minutes.
Add in your chopped Pickled Mustard Greens. Stir-fry for about 3 minutes. Add in 1 tsp. Sugar. Add some chopped Green Onions.
Add the egg mixture. Stir for about 5 minutes on medium heat.  Remove and serve.
