Com Chien Cha Lua (Vietnamese Fried Rice with Ham)




Com Chien Cha Lua (Vietnamese Fried Rice with Ham)
Ingredients
1 piece Cha Lua
2 Eggs
3-4 cups cooked Rice (one day old)
1 tsp. minced Garlic
1 Tbsp. Dried Shrimp (soaked in water)
2 chopped Green Onions
1 Tbsp. Rice Vinegar
2 Tbsp. Fish Sauce
1 Tbsp. Oil
1 tsp. Sugar
Black Pepper

Cut Cha Lua into small pieces, put in a bowl and set aside. In a pan add in 1 Tbsp. Oil. Add in 1 tsp. minced Garlic.
Sauté for a few seconds and add in 1 Tbsp. Dried Shrimp.  Remember to soak the Dried Shrimp in water and drain out.
Add in the Cha Lua. Stir for 2-3 minutes. Then add in 3-4 cups of cooked Rice.  Stir until there's no lumps of rice.
Using medium heat, add in 2 Eggs. Mix well.  Add in 1 Tbsp. Rice Vinegar. Add in 2 Tbsp. Fish Sauce. Add in 1 tsp. Sugar.
Continue to stir. Add in some Black Pepper. Add in 2 chopped Green Onions. Mix well and serve.
