Bun Gao Xao Gia He (Stir-fry Rice Stick Noodles with Bean Sprouts and Chives)
Ingredients
1 package Rice Stick Noodles
1/4 cup Dried Shrimp
6 Shrimp
1/2 Bean Sprouts
1 handful Chives
3 tsp. Sesame Oil
2 Carrots
1 Tbsp. minced Garlic
2 Tbsp. Oil
1 tsp. Rice Vinegar
1 1/2 Tbsp. Oyster Sauce
1/2 tsp. Mushroom Seasoning
1 tsp. Sugar
1/2 tsp. Salt
2 tsp. Soy Sauce
Black Pepper
Bring a large pot of water to a boil. Add in 1 package of Rice Stick Noodles. Cook for 3-4 minutes or until soften.
Drain the water out. Rinse with water and shuffle for a couple of minutes. Add in 3 tsp. Sesame Oil, mix and set aside.
Peel and wash 2 Carrots. Cut into thin strips. Fill a small pot with some water, bring to a boil. Add in the Carrots, let it boil for 1-2 minutes.
Drain it out and set aside. Cut 2 inch long Chives. Put in a bowl and set aside. Peel and devein the Shrimp. Put in a bowl and set aside.
In a large pan add in 2 Tbsp. Oil and 1 Tbsp. minced Garlic. Sauté for a few seconds, add in 1/4 cup Dried Shrimp. Stir for a few minutes and add in the Shrimp.
When the Shrimp turns pink add in the Rice Stick Noodles. Add in 1 tsp. Rice Vinegar. Add in 1 1/2 Tbsp. Oyster Sauce and mix. Add in 1/2 tsp. Mushroom Seasoning.
Add in 1 tsp. Sugar. Add in 1/2 tsp. Salt. Add in 2 tsp. Soy Sauce. Mix. Add in the Carrots, Bean Sprouts and Chives. Mix well. Add in some Black Pepper. Mix and serve.
