Banh Mi Xiu Mai (Vietnamese Meatball Sandwich)





Banh Mi Xiu Mai (Vietnamese Meatball Sandwich)








Ingredients






Meatballs:
1 lb. Pork or Ground Pork
1 Tbsp. minced Garlic
2 Tbsp. chopped Shallots
1/2 Jicama (about 1 cup diced Jicama)
1/2 tsp. Salt
1 tsp. Sugar
1/8 tsp. Mushroom Seasoning
Black Pepper
1 Tbsp. Sesame Oil
1 tsp. Annatto Seed Oil




Tomato Sauce:
3 tsp. Annatto Seed Oil
1/2 cup chopped Onions
1 Tbsp. Soy Sauce
1 tsp. Sugar
1/2 tsp. Salt
Pinch of Mushroom Seasoning
1/2 cup Chopped Green Onions
Black Pepper
1 tsp. Oil
2 Tomatoes




Extra:
French Baguette
Pickled Daikon and Carrots
Cilantro
Cucumbers







Mince 1 lb. Pork, if you have Ground Pork you can skip this step. Put it in a bowl and set aside. Dice 2 Tomatoes, put in a bowl and set aside.
Cut half of a Jicama.  Peel and dice it, then put it in a bowl and set aside.
In a bowl add in your 1 lb. Pork.  Add in 2 Tbsp. chopped Shallots. Add in 1 Tbsp. minced Garlic. Add in about 1 cup diced Jicama. Add in 1/2 tsp. Salt. Add in 1 tsp. Sugar.
Add in 1/8 tsp. Mushroom Seasoning. Add some Black Pepper. Add in 1 Tbsp. Sesame Oil. Mix well. Put in the refrigerator for 30 minutes.
After 30 minutes, take it out of the refrigerator and add in 1 tsp. Annatto Seed Oil. Mix well and roll it into a ball.  Place it in an aluminum foil pan.
Repeat until you use up all your meat. Place the pan in a steamer. 
Steam for 10 minutes or until cooked. After 10 minutes take it out and let it cool.
In a pan add in 1 tsp. Oil. Add in 1/2 cup chopped Onions. Add in 3 tsp. Annatto Seed Oil.  Sauté for a few minutes. Then add in the diced Tomatoes.
Using medium heat, let it simmer.  When the tomato becomes watery, add in 1 Tbsp. Soy Sauce. Add in 1/2 tsp. Salt. Add in 1 tsp. Sugar. Add in a pinch of Mushroom Seasoning.
Mix well.  Add in the meatballs. Your aluminum foil pan should have so juice from the meat when it was steaming, pour it in and mix with the tomato sauce.  Let the meatballs simmer in the tomato sauce for a few minutes.
Add in 1/2 cup chopped Green Onions.  Continue to let it simmer.  Add some Black Pepper and turn off heat.
To assemble your Vietnamese Meatball Sandwich, you need some Pickled Daikon and Carrots, Cilantro, Cucumbers, 4 Meatballs, and French Baguette.  Cut a slit into your bread, add in some Meatballs.  Drizzle some tomato sauce on top.
Add in some Pickled Daikon and Carrots. Add some Cilantro. Them some Cucumbers and you are done.
