Sweet Red Bean Soup (Che Dau Do)

Ingredients:
1 cup Azuki Bean (soaked overnight)
Pinch of Salt
6-7 cups Water (add in more water if needed)
1/2 cup Tapioca Pearls
Orange Peel
1/2 cup Brown Sugar or to taste
1/2 tsp Vanilla Extract
Salt

Soak 1 cup Red Bean overnight, rinse it out the next day, and put in a pot with 6-7 cups Water.
Add in a pinch of Salt, the Salt will help the bean soften faster. Add more water if needed.  Add in Orange Peel.  Using medium heat let it simmer for about 45 minutes.  Add in 1/2 tsp. Vanilla Extract.
Continue to let it simmer.  In a small sauce pan boil 1/2 cup Tapioca Pearls.  Cook until the pearls become translucent.  Pour it out and rinse it with cold water.
Going back to the bean soup.  Add in 1/2 cup Brown Sugar or to taste. Then add in the Tapioca Pearls. Let it simmer for another 10 minutes.  Remove the Orange Peel and serve.  This soup can be eaten hot or cold.
