Che Troi Nuoc (Sticky Dumplings with Syrup)


Ingredients Dumplings:
3 cups Glutinous Flour
1 cup Rice Flour
1 1/2 cup water (add more as needed)
1 cup Mung Bean (soaked for at least 4 hrs.)
1 Chopped Green Onions
1 Tbsp. Oil.
water
Pinch of Salt

Ingredients Toppings and Syrup

Syrup
3-4 cups water
1/4 cup Hard Brown Sugar
1 cup White Sugar
1/4 cup Ginger (cut into thin strips)

Peanuts/Sesame Seeds Topping
1-2 Tbsp. Sesame Seeds
1-2 Tbsp. Roasted Peanuts
Pinch of Salt
1 Tbsp. Sugar

Coconut Sauce
3 Tbsp. Coconut Milk
2 tsp Sugar
Pinch of Salt

Soak 1 cup Mung Bean overnight or at least 4 hours.  Rinse the Mung Bean at least 2 times.
Pour enough water that it covers the Mung Bean. 
Add a pinch of salt and cook until the water has been absorbed. Then set aside.
In a large bowl add in 3 cups Glutinous Flour and 1 cup Rice Flour. 
Pour in 1 and a half cup water.  Mix, add little bits of water as needed.  
You want it to have a soft texture and no longer sticks to your hand.
Then wrap it with plastic wrap and let it sit for 30 minutes.
This is optional, after 30 minutes you can take out a small chuck and add in some food coloring.
Going back to the Mung Bean.  You need 1 chopped Green Onion and 1 Tbsp. oil saute in a pan for a few seconds.
Put it into a bowl.  Then add in the cooked Mung Bean.  Mix it together.
Mash the Mung Bean make it into balls.
Now take some of your dough, flatten it and put one of the Mung Bean balls in the middle.  Roll it into a ball and set on a plate.
Use some of your dough to make small tiny balls also.  Make as many as you can and use up all your dough.
In a pot pour in about 3-4 cups water.  Add in 1/4 cup Brown Sugar.  Then add in 1 cup White Sugar.  Once the Sugar has melted, let it simmer.
In a large sauce pan, boil some water and add in the dumplings.  Wait for it to float to the top.  This means it is cooked.  Take it out and drop it into cold water.
Then, add it into the syrup.
Cut strips of Ginger about 1/4 cup and add into the syrup pot. Let it simmer for a few minutes.
In a pan add in 1-2 Tbsp. Sesame seeds.  Stir until it becomes light brown. Do the same with the peanuts.
Then smash the sesame seeds and the peanuts together.
Add in a pinch of salt and 1 Tbsp. Sugar.  Mix it.
To make the coconut sauce.  In small sauce pan add in about 3 Tbsp. Coconut milk, 2 tsp. Sugar. and a pinch of salt.
Mix until it dissolved then turn off heat and set aside.
To serve pour some dumplings and the Ginger syrup into a small bowl. 
Pour some coconut sauce on top then sprinkle some peanuts and sesame seeds.
