Canh Bau Nau Tom (Opo Squash with Shrimp Soup)


1 Opo Squash
4-5 Minced Shrimp
4 cups Water
1 Tbsp. Minced Garlic
1 chopped Green Onion
1 Tbsp. Oil
1/2 tsp. Sugar
1 tsp. Salt
1/4 tsp. Mushroom Seasoning
1 Tbsp. Fish Sauce
Dash of Black Pepper

Peel and wash your Squash. Cut it in small pieces.
In a pot add 1 Tbsp. Oil and 1 Tbsp. Minced Garlic.  Sauté for a few seconds then add in the minced Shrimp.
Wait for the Shrimp to turn slightly pink.  Add in 4 cups Water. Bring to a boil.
Add in the Squash. Let it simmer for about 5 minutes.
Add in 1/2 tsp. Sugar, 1 tsp. Salt, 1/4 tsp. Mushroom Seasoning, and 1 Tbsp. Fish Sauce.
Continue to let it simmer for a few seconds.  Add in the chopped Green Onions and a Dash of Black Pepper.
