Vietnamese Spring Rolls with Jicama, Chinese Sausage, Egg, Carrot, and Dried Shrimp. 
Bo Bia
Ingredients:
1 Jicama
2 Carrots
5 Shallots
4 Garlic Clovers
1 tsp oil
1/2 tsp Salt
2 eggs
1 tsp Fish Sauce (Optional)
1/2 cup Dried Shrimp
1 tbs oil
1 tbs Minced Garlic
2 Chinese Sausage
Basil Leaves
Fried Onions (Optional)
Rice Paper
Crushed Peanuts
Dipping Sauce:
1-1 1/2 cup Hoisin Sauce
1 tbs of oil
5 sliced Shallots
1/2 cup Water
2 tsp Vinegar
1 tbs Sugar
Step 1:
Peel the Jicama, Carrots, Shallots, and Garlic Clovers.
Cut the Jicama and Carrots into long thin strips. 
Cut the Shallots into thin slices and chop the Garlic.
Step 2:
1 tsp of oil and 1 tsp of Minced Garlic.  Saute in pan. 
Add in the Jicama and Carrot. Add in 1/2 tsp Salt. 
Cook for about 7-10 Minutes. Then set aside.
Step 3:
Beat 2 eggs in a small bowl.  You can add in 1 tsp of Fish Sauce (Optional).
Remember to use a nonstick pan  pour enough egg to create a thin layer.  Swirl the pan to make sure it is evenly spread out. Then flip it on a plate.
Repeat until you used up all the eggs. 
Now cut the eggs into strips. Set aside.
Step 4:
Remember to soak the Dried Shrimp for about half an hr. Put 1 tbs oil 1 tbs Minced Garlic into pan.  Stir-fry 1/2 cup Dried Shrimp for about 3-5 Minutes.  Put in a bowl and set aside.
Step 5:
Boil the Chinese Sausage.  Cut the Chinese Sausage into thin slices.  Put in bowl and set aside.
Step 6:
Dipping Sauce:
1 tbs of oil 5 sliced Shallots.  Saute for 1 to 2 minutes. Add in 1-1 1/2 cup Hoisin Sauce.  Then add in 1/2 cup of water, 2 tsp Vinegar, and 1 tbs Sugar.
Mix and let simmer for 3 minutes.
Step 7:
On a large table place all the things you need to start rolling. 
1 package of Rice paper
Chinese Sausage
Crushed Peanuts
Fried Onions (Optional)
Dried Shrimp
Jicama and Carrot
Basil
Set a bowl of warm water to tip in the Rice Paper to soften.
Place the Rice Paper on a plate.  Put 3 pieces of Chinese Sausage, Egg, and Jicama and Carrot.  Sprinkle some crushed Peanuts, Dried Shrimp, Fried Onions (Optional).  Now place a few Basil leaves. 
Roll the Rice Paper over, fold the two sides and continue to roll tightly.  
Continue until you use up all the ingredients.
